Here's a great recipe for Superbowl parties or any time of the year; it's the amazing Buffalo Chicken Meatball recipe.  I first tasted these at BBG's restaurant and bar on Commercial Driven Yorkville.

  • 1 pound lean ground chicken
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1 carrot
  • 1 stalk celery
  • 2 green onions
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 ounce crumbled blue cheese
  • 1/2 cup red hot sauce (I like Frank's Red Hot)
  • 1 tablespoon butter

 

Directions

Preheat the oven to 350F.
Finely chop celery, carrot and green onion
In a large bowl, combine celery, carrot and onion, egg, breadcrumbs, garlic powder, salt, 1/2 the hot sauce and the blue cheese along with the chicken.
Mix together (best if you do it by hand).
Form into medium sized meatballs and place on cookie sheet.
Bake for about 30 minutes.  When complete, cover with Buffalo Wing Sauce and serve.

Buffalo Chicken Wing Sauce

  • 8 T hot pepper sauce (I like Frank’s Red Hot, that’s what is used at the Anchor Bar in Buffalo)
  • 1/2 cup cold unsalted butter
  • 1 1/2 tablespoons white vinegar
  • 1/4 teaspoon Worcestershire sauce
  • 1/4 teaspoon cayenne pepper
  • 1/8 teaspoon garlic powder
  • salt
