This week's featured restaurant on Plate Night with Bill Keeler is PK's Pub in Herkimer.  He makes two great dishes: first, off the menu, a great chicken dish called Chicken Capicola.  Then, on his 'Specials Board' he puts together an awesome Pork Rib-Eye dish over horseradish mashed potatoes and crispy bacon brussels sprouts.  The cool thing about this dish is the fact that you rarely see this cut of meat; but, the pork rib-eye is becoming more and more popular because it's economical and it literally melts in your mouth.

Chef Brian Hess features daily specials at PK's Pub in Herkimer.  Don't shy away from his 'Specials Board' when you visit because he regularly comes up with some pretty special culinary delights.
