Workers are busy installing equipment in preparation for the opening of a Perkins Restaurant and Bakery in Tioga County.

Plans for the business in Apalachin were announced last summer but construction at the site on Route 434 didn't get underway until December.

Beth Ann Smith, president of Rajumaanar Enterprises Corporation, said work on the project is close to completion.

Smith had been aiming for a June 12 opening but she said things are "a few days behind schedule." She said the opening may be delayed by a week to ten days.

Smith said crews are working long hours to get things ready. She also noted the restaurant now has been listed on the Perkins website so travelers will be able to find it once it's operational.

Although many people have been hired for the business, Smith said there still are openings for shift leaders, wait staff and hostess positions. She said people who are interested may obtain an application at the Comfort Inn, which is adjacent to the new restaurant building.
