One of the biggest cooking questions in Upstate New York is "What's the real Utica Chicken Riggies recipe?"  I had the opportunity to have that question answered when I did a guest spot on the "Aqua Vino's Cooking with Geno' show which plays on YouTube.

Michael Geno is the head chef and 'star of the show' at Aqua Vino restaurant in Utica. Utica Comets play-by-play announcer Joe Roberts is the host of the program, which features Geno cooking with Utica-area public figures and my episode answered the big riggies questions: Is there heavy cream in the recipe? Who invented Chicken Riggies? How old is the recipe?  After all, Geno was there when the magic happened, and today he has no problem sharing the recipe that's been on his menu since Aqua Vino opened in 2007.

Aqua Vino, owned and operated by Utica Comets owner and former Philadelphia Flyers goalie Rob Esche and his mother, Beverly. The restaurant is located on the historic Erie Canal and offers outdoor seating and an Italian-American menu.

Watch episode 4 of 'Aqua Vino's Cooking with Geno' below and let's settle the Chicken Riggies question once and for all; that is, until somebody comes along and claims they know a different version. In the meantime, I'm confident that this is the real story because Michael Geno was actually there when it happened!
